Ingredientes

  • 4 egg whites
  • 1 c. granulated sugar
  • 1/4 teaspoon cream of tartar

  1. MERINGUE SHELL: Heat oven to 275 degrees. Beat 4 egg whites till stiff, gradually add in sugar and cream of tartar. Spoon around bottom and sides of greased 10-inch pie plate. Bake for 1 hour. Remove from oven, allow to cold.
  2. MOUSSE: Heat 12 ounce. semi-sweet chocolate morsels in double boiler, remove from heat. Add in egg yolks and whole egg, add in rum.
  3. In separate bowl, beat egg whites till stiff. In separate bowl, beat 2 c. heavy cream till thick. Fold egg whites and heavy cream into chocolate mix, spoon into cooled meringue shell. Chill a few hrs.
  4. Whip 1/2 c. heavy cream, spoon on top of chocolate mix. Shave chocolate on top of heavy cream for decoration. Enjoy!
