Receta Chocolate Peanut Butter Chia Pudding
I try to eat chia almost every day, whether it's in my smoothie, or in a pudding. This dessert is creamy, thick, rich and satisfying, and super healthy. Read more about the benefits of chia seeds here.
- Chocolate Nut Butter Pudding
- 1 cups cashews, soaked 2 hours
- 2 cups, coconut water,(or water), add as needed
- 1 cup coconut meat
- 1/4 cup *Irish Moss paste
- 3 - 4 Tbsp cacao powder (depending on how chocolaty you like it)
- 2 Tbsp nut butter
- 2 - 3 Tbsp yacon syrup (agave, or your fav sweetener)
- 1 Tbsp cacao paste, melted (optional)
- 1/2 tsp vanilla extract or (2 drops Vanilla Extract (Medicine Flower)
- 1/4 cup ground chia seeds
- pinch of sea salt
Blend nuts and coconut water until creamy. Melt cacao paste in a bowl over hot water. Add with remaining ingredients, except chia seeds and blend well.
Add chia. Add more water if needed. Pudding will thicken some as it chills, but should be pretty thick at this point. If not, add more ground chia. Refrigerate at least 1 hour.
Garnish with sprinkle of cacao powder, shaved cacao paste, cinnamon, chopped nuts, or whipped kreme.
