Chocolate Peppermint Cheesecake Bites

Ingredientes

  • 2 cups finely crushed chocolate wafer cookie crumbs (about 36 wafers)
  • ½ cup butter, melted
  • 1 (8 oz.) package cream cheese, softened
  • 1 (14 oz.) can Chocolate Flavored Sweetened Condensed Milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • ½ cup semi-sweet chocolate chips
  • 3 teaspoons vegetable oil
  • 2 tablespoons crushed peppermint hard candies

Direcciones

  1. Preheat oven to 325°F. Line 18 muffin cups with foil baking cups. Combine wafer crumbs and butter in medium bowl. Divide mixture evenly into prepared muffin cups, pressing firmly to form crusts. Bake 6 minutes. Cool completely.
  2. Beat cream cheese in medium bowl with electric mixer on medium speed until fluffy. Beat in sweetened condensed milk, eggs, vanilla and peppermint extract until smooth. Divide evenly over crusts.
  3. Bake for 20 to 25 minutes or until set. Cool completely. Gently remove foil baking cups.
  4. Microwave chocolate chips and oil in small microwave-safe bowl on HIGH for 30 seconds. Stir until smooth. Drizzle over cheesecakes. Sprinkle with peppermint candies. Chill 1 hour. Store in refrigerator.
