%20without%20coming%20across%20even%20the%20slightest%20inspiration.%20You%20curse%20your%20collection,%20wonder%20why%20you%20spent%20so%20much%20money%20on%20all%20the%20wrong%20books%20and%20turn%20to%20the%20internet%20with%20even%20less%20success.%20Without%20even%20a%20primary%20ingredient%20in%20your%20mind,%20the%20magic%20of%20the%20internet%20is%20virtually%20useless.%20You%20start%20searching%20%E2%80%9Ceasy%20weekday%20meal%E2%80%9D%20or%20%E2%80%9Chealthy%20dinner%20for%20two%E2%80%9D%20but%20the%20thousands%20of%20results%20produced%20by%20Google%20only%20cripple%20you.%20You%E2%80%99ve%20wasted%20precious%20time,%20probably%20sacrificing%20your%20lunch%20hour%20or%20even%20worse,%20that%20time%20you%20needed%20to%20finish%20that%20time%20sensitive%20work%20project.%20You%20go%20back%20to%20your%20hectic%20life,%20defeated,%20and%20end%20up%20ordering%20pizza%20for%20dinner.%20Again.%3C/p%3E%3Cp%3EAnd%20then%20there%20are%20those%20times%20when%20you%20aren%E2%80%99t%20even%20thinking%20about%20cooking%20or%20what%20your%20next%20meal%20will%20be,%20and%20a%20recipe%20seemingly%20jumps%20out,%20attacking%20you.%20%E2%80%9CMake%20me!%20Pick%20me!%E2%80%9D,%20it%20says.%20And%20that%E2%80%99s%20pretty%20much%20how%20I%20ended%20up%20eating%20steak%20with%20chocolate%20(really,%20could%20there%20be%20a%20better%20meal?)%20and%20a%20sprinkle%20of%20rosemary.%3C/p%3E%3Cp%3EI%E2%80%99m%20hosting%20dinner%20for%20my%20mom%E2%80%99s%20birthday%20in%20a%20few%20weeks.%20Yes,%20a%20few%20weeks,%20but%20I%E2%80%99ve%20already%20started%20stressing%20about%20menus.%20It%E2%80%99s%20a%20good%20stress%20of%20course,%20trying%20to%20narrow%20down%20what%20protein%20will%20be%20the%20feature%20dish,%20and%20what%20supporting%20cast%20members%20will%20best%20support%20and%20elevate%20its%20beauty.%20Menu%20building%20usually%20means%20I%20break%20out%20all%20the%20cookbooks.%20I%20start%20with%20a%20few%20favorites,%20generally%20seasonally%20driven%20first,%20then%20classics%20with%20recipes%20that%20always%20work%20out%20perfect,%20and%20finally,%20the%20other%20two%20dozen,%20in%20no%20particular%20order.%20After%20settling%20on%20a%20few%20dishes,%20the%20process%20of%20returning%20everything%20to%20its%20proper%20place%20began.%20While%20cleaning,%20Ellie%20Krieger%E2%80%99s%20The%20Food%20You%20Crave%20popped%20open%20to%20her%20Beef%20Tenderloin%20with%20Rosemary%20and%20Chocolate%20recipe.%20I%20was%20transfixed%20on%20the%20photo%20of%20perfectly%20cooked%20sliced%20of%20roast%20beef%20next%20to%20a%20puddle%20of%20rich%20chocolately%20sauce.%20How%20had%20I%20never%20seen%20this%20recipe%20before?%20There%20was%20no%20argument.%20The%20next%20night%E2%80%99s%20dinner%20would%20be%20that%20meal.%3C/p%3E%3Cp%3EI%20made%20a%20few%20adjustments,%20mostly%20to%20the%20meat.%20I%20didn%E2%80%99t%20have%20a%20tenderloin%20roast%20handy%20and%20wasn%E2%80%99t%20about%20to%20go%20out%20and%20buy%20one%20with%20several%20other%20roasts%20from%20our%20quarter%20cow%20purchase%20already%20stocked%20in%20the%20freezer.%20I%20opted%20for%20a%20sirloin%20tip%20instead.%20The%20results%20were%20good,%20though%20I%E2%80%99m%20sure%20nothing%20could%20compare%20to%20the%20buttery%20beef%20of%20a%20tenderloin.%20I%20love%20that%20the%20roast%20only%20needed%20half%20hour%20to%20cook.%20Add%20the%20prep%20and%20searing%20time%20and%20it%20was%20still%20an%20easy%20weekday%20meal.%20Dinner%20was%20served%20simply,%20with%20rosemary%20smashed%20potatoes%20and%20a%20tossed%20salad.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20425%C2%B0F.%20Heat%202%20teaspoons%20olive%20oil%20in%20a%20small%20dutch%20oven.%20Pat%20roast%20dry%20with%20paper%20towels%20and%20season%20generously%20with%20salt%20and%20pepper,%20once%20oil%20is%20smoking%20(windows%20open,%20fan%20on!),%20sear%20roast%20on%20all%20sides%20until%20well%20browned,%20about%2010%20minutes%20total.%3C/p%3E%3Cp%3ETransfer%20meat%20to%20a%20rack%20set%20in%20a%20baking%20sheet.%20Roast%20until%20an%20instant%20read%20thermometer%20inserted%20into%20the%20thickest%20point%20reads%20140%C2%B0F%20for%20medium%20rare,%20about%2030%20minutes.%20Remove%20from%20oven,%20cover%20tightly%20with%20aluminum%20foil%20and%20let%20rest%20until%20sauce%20is%20nearly%20done.%3C/p%3E%3Cp%3EWhile%20meat%20cooks,%20prepare%20the%20sauce.%20Heat%20remaining%202%20teaspoons%20of%20olive%20oil%20in%20a%20medium%20saucepan%20over%20medium%20high%20heat.%20Add%20shallots,%20carrot%20and%20celery,%20cook,%20stirring%20occasionally%20until%20softened.%20Add%20garlic%20and%20cook%202%20minutes%20more.%20Add%20wine,%20broth%20and%20tomato%20paste,%20stirring%20well.%20Add%20bay%20leaf%20and%20thyme%20and%20bring%20to%20a%20boil.%20Reduce%20heat%20and%20simmer%20until%20liquid%20reduces%20to%20about%201/2%20cup,%20about%2040%20minutes.%20Strain%20sauce%20through%20a%20fine%20mesh%20sieve%20into%20a%20small%20pot.%20Whisk%20in%20cocoa%20powder%20and%20rosemary.%20Slice%20roast%20and%20serve%20with%20rosem
