Ingredientes

  • 5 1/3 Tbsp. (2/3 stick) unsalted butter
  • 3 Tbsp. canola oil
  • 2/3 c. light brown sugar
  • 2 x Large eggs
  • 2 tsp vanilla extract
  • 1 1/3 c. all-purpose flour
  • 1 tsp baking pwdr
  • 2/3 c. minced walnuts
  • 1/3 c. dry apricots
  • 2/3 c. semisweet chocolate morsels

Direcciones

  1. Jacques Pepin mixes the dough in the food processor and then folds in the chocolate chips, nuts and dry fruit by hand; you may substitute raisins for the apricot pcs, if you wish.
  2. Preheat the oven to 375 degrees F.
  3. Place the butter, oil, sugar, Large eggs, and vanilla in the bowl of a food processor, and process the mix for a few seconds, just till smooth. Add in the flour and baking pwdr, and process till they are incorporated and the dough mix is smooth, about 5 seconds.
  4. Transfer the dough to a bowl and stir in the nuts, apricot pcs, and chocolate chips. Drop the dough onto ungreased cookie sheets, using about 2 Tbsp. of dough per cookie and leaving 2 1/2 inches between each cookie. Bake for 8-10 min. Let the cookies cold on the pan for a few min, then transfer to a wire cooling rack to cold completely.
