- vegetable oil

- eggs, lightly beaten
- 1/2 c
- buttermilk
- 1 t
- vanilla extract
- 2 1/2 c
- all-purpose flour
- 1/4 c
- baking cocoa
- 1 t
- baking soda
- 1/2 t
- baking powder
- 1/2 t
- salt
- 1/2 t
- ground cinnamon
- 1/4 t each
- ground cloves and allspice
- 2 c
- shredded zucchini, thawed if frozen
- 1/2 c
- chopped nuts
- 1/2 c
- semisweet mini chocolate chips
- 1/2 2.5 oz pkg Rolo minis, chilled and cut in half
Cooking Directions
In a mixing bowl, beat the butter, oil, and sugar. Add the eggs, buttermilk and vanilla; mix well. Combine the flour, cocoa, baking soda, baking powder, salt, cinnamon, cloves and allspice; gradually add to creamed mixture. Stir in zucchini.
Cut chilled rolo minis in half
Spread batter into a greased 13x9x2 inch baking pan. Sprinkle with nuts, chips and rolo minis. Bake at 350 for 35-40 mins or until a toothpick inserted near the center comes out clean. Cool on wire rack.
