Chopped Asian Salad
Is it possible to become addicted to a technique? I love, and I mean love, creating chopped salads. And, in case you didn’t already know, I have an ongoing love affair with Asian Inspired cuisine.
I decided to create a Chopped Asian Salad.
For added crunch I baked wonton wrappers in the oven with a bit of butter and salt to get crispy wonton strips. NO FRYING necessary. How cool is that?
I baked 6 wonton and used about 1 teaspoon of butter for all six wrappers.
Four wonton wrappers are 2 PP.
Chopped Asian Salad
My cheat for this salad is using Newman’s Own Lite Sesame Ginger Salad Dressing

Serves: 6
Ingredients
- 1 head green leaf lettuce, chopped (I use scissors to chop mine)
- 1 cups shredded cabbage {I used the store-bought coleslaw mix}
- 1 carrot, shredded or julianned
- 1 red bell pepper, chopped
- 1 green onion, sliced on the bias
- 1.8 cup cilantro, chopped
- 8 oz. drained mandarin oranges {about 1 cup}
- ¼ cup sliced almonds
- crispy baked wonton strips(about ½ square per person) 4 to 6 strips
Directions
In a large bowl, combine all ingredients for salad
Add1 tablespoon of dressing per serving
Top with more almonds and a few wonton strips

What a great salad combination. I am sure you can create your own homemade Sesame Ginger dressing, but sometimes, I just like convenience. Especially on the weekends.
This salad is addicting and I know that if I made extra, I would have had seconds, and maybe even thirds.
The hubby loved the baked wonton strips and he wanted to eat them as a snack. the same way you would eat a bag of chips. Not a bad substitute.
