- 1/2 pound lean ground beef
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 15 ounce cans black beans, rinsed and drained
- 1 14 oz can diced tomatoes
- 1 10 ounce cans diced tomatoes with green chilies
- 1 7 oz can salsa verde
- 2 tablespoon chili powder
- 1 tablespoon ground cumin
- 1/2 teaspoon dried thyme, crushed
- 1 teaspoon salt or to taste
- fresh ground pepper to taste
- garnishes: sour cream, shredded Colby-Jack, sliced green onions
