.%20Get%20me%20looking%20like%20a%20proper%20grown%20up,%20organised%20experienced%20baker.%20A%20far%20cry%20from%20the%20novice%20I%20was%20two%20years%20ago.%3C/p%3E%3Cp%3EOopsThen%20I%20make%20a%20comical%20error.%20There%20is%20my%20cake,%20in%20the%20beautifully%20lined%20tin,%20with%20its%20extra%20double%20layer%20of%20greaseproof%20paper%20wrapped%20neatly%20around%20it.%20I'm%20just%20about%20to%20pop%20it%20in%20the%20oven%20when%20I%20spot%20the%20unopened%20boxes%20of%20glac%C3%A9%20cherries%20and%20mixed%20peel.%20%20My%20heart%20sank.%20I%20was%20so%20tempted%20to%20just%20shove%20it%20in%20anyway%20and%20make%20believe%20all%20was%20well,%20but%20my%20adult%20self%20took%20charge.%20So%20out%20of%20the%20tin%20came%20the%20cake%20mix,%20the%20extra%20ingredients%20were%20added,%20I%20re-lined%20the%20tin%20(a%20fiddly%20annoying%20job%20the%20first%20time,%20never%20mind%20the%20second)%20and%20popped%20the%20now%20complete%20cake%20into%20the%20oven.%20Phew.%20Happily%20I%20also%20managed%20to%20cook%20it%20without%20burning%20it.%3C/p%3E%3Cp%3ESo%20neatCooked%20cake%20wrapped%20in%20foilMy%20ingredient%20debacle%20aside%20the%20cake%20went%20rather%20well.%20I%20went%20with%20the%20Nigella%20Lawson%20Time%20Honoured%20Christmas%20cake%20recipe,%20from%20her%20'Feast'%20book,%20although%20I%20think%20its%20in%20Domestic%20Goddess%20as%20well.%20She%20gives%20a%20table%20of%20ingredients%20that%20is%20adjusted%20for%20different%20size%20tins.%20So%20useful.%20%20My%20cake%20is%20wrapped%20up%20and%20cooling,%20ready%20to%20be%20sloshed%20with%20more%20brandy%20every%20few%20days%20for%20a%20couple%20of%20weeks%20until%20the%20icing%20adventure%20begins.%3C/p%3E%3Cp%3ETime%20Honoured%20Christmas%20Cake%3C/p%3E%3Cp%3EIngredients%20Table%3C/p%3E%3Cp%3E251/2cm%3C/p%3E%3Cp%3E23cm%3C/p%3E%3Cp%3E150%C2%BAC%20/%20gas%20mark%202%20reduce%20to%20140%C2%BAC%20/%20gas%20mark%201%20after%201%20hour%3C/p%3E%3Cp%3Ecooking%20time%3C/p%3E%3Cp%3E2-2.5%20hours%3C/p%3E%3Cp%3E3-3.5%20hours%3C/p%3E%3Cp%3E4-4.5%20hours%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EPlace%20all%20of%20the%20fruit%20in%20a%20large%20bowl,%20and%20add%20the%20brandy%20or%20sherry.%20Cover%20and%20let%20the%20fruit%20soak%20overnight.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20150%C2%BAC/gas%20mark%202.%20Line%20your%20tin%20with%20a%20double%20thickness%20of%20brown%20paper,%20then%20line%20again%20with%20baking%20parchment,%20both%20to%20come%20up%20a%20good%2010cm%20above%20the%20rim%20of%20the%20tin.%3C/p%3E%3Cp%3ECream%20the%20butter%20and%20sugar,%20then%20beat%20in%20the%20orange%20and%20lemon%20zest.%20Add%20the%20eggs%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition,%20and%20then%20the%20marmalade.%20Sift%20the%20dry%20ingredients%20together,%20then%20mix%20the%20fruit%20alternately%20with%20the%20dry%20ingredients%20into%20the%20creamed%20mixture.%20Add%20the%20almond%20essence%20and%20combine%20thoroughly.%3C/p%3E%3Cp%3EPut%20the%20cake%20mix%20into%20the%20prepared%20tin%20and%20bake%20following%20the%20table%20above,%20or%20until%20a%20cake-tester%20comes%20out%20clean.%3C/p%3E%3Cp%3EWhen%20the%20cake%20is%20cooked,%20brush%20with%20a%20couple%20of%20tablespoons%20of%20extra%20liqueur.%20Wrap%20immediately%20in%20its%20tin%20%E2%80%93%20using%20a%20double-thickness%20of%20tin%20foil%20%E2%80%93%20as%20this%20will%20trap%20the%20heat%20and%20form%20steam,%20which%20in%20turn%20will%20keep%20the%20cake%20soft%20on%20top.%20When%20it%E2%80%99s%20completely%20cold,%20remove%20the%20cake%20from%20the%20tin%20and%20rewrap%20in%20foil,%20storing,%20preferably%20in%20an%20airtight%20tin%20or%20Tupperware,%20for%20at%20least%203%20weeks.%3C/p%3E%3Cp%3ELink%20to%20recipe%20here%20where%20someone%20else%20has%20already%20reproduced%20it.%3C/p%3E){kind=link}
