Ingredientes

  • 2 c. lima beans see pantry
  • 1/4 c. extra virgin extra virgin olive oil may be doubled 2 slices bacon in 1/4 inch dice optional
  • 2 med onions quartered
  • 1 x clove garlic smashed
  • 2 x tomatoes peeled and quartered
  • 1 x beef bouillon cubes dissolved in
  • 1 c. water freshly grnd black pepper to taste salt optional minced fresh parsley optional garnish

  1. CHRISTMAS LIMA BEANS-Large with brown and cream colored markings. Popular in the early 1900's. With a chestnut-like flavor they are superb for casseroles and salads. (R) CASSOULETS U.S.A.
  2. Prepare Beans: Rinse and pick over beans. Pour boiling water over beans to cover by 2 inches, cover and leave for 1 hour, then drain and rinse.
  3. Prepare Casserole: In a 2 qt casserole place all ingredients except garnish, mix well, adjust seasoning (pepper and salt, if you like), cover and bake in a 300 degree oven till beans are the desired degree of tenderness (about 4 hours). Uncover, garnish with parsley (or possibly green onions).
  4. Serve piping warm. With 2 ounces of bacon, PER SERVING: 530 cals, 21.4 g
