Ingredientes

  • 1/2 c. vegetable shortening
  • 2 c. lowfat milk scalded
  • 2 lrg Large eggs beaten
  • 1 c. sugar plus
  • 1 Tbsp. sugar
  • 1 c. mashed potatoes unsalted
  • 1 tsp salt
  • 2 Tbsp. active dry yeast
  • 1/2 c. lukewarm water
  • 7 c. unbleached all-purpose flour
  • 1 c. raisins
  • 1 c. minced walnuts
  • 4 Tbsp. butter softened
  • 1/2 tsp grnd cinnamon

Direcciones

  1. Dissolve the vegetable shortening in the lowfat milk in a bowl and cold to lukewarm. Stir in the Large eggs, 1 c. sugar, potatoes, and salt. Dissolve the yeast in lukewarm water and stir onto the potato mix. Stir in the flour, raisins, and nuts. Mix thoroughly for 5 min by hand. Cover with plastic wrap and let rise in a hot, draft-free place for 1 hour.
  2. Turn out onto lightly floured surface. Roll into a 1/2-inch thick rectangle and spread with the butter. Sprinkle with the 1 remaining Tbsp. sugar and the cinnamon. Roll like a jelly roll and slice 12 equal slices. Place slices flat in 12- by 8-inch baking dish. Cover with a tea towel and let rise till double in bulk, about 30 min.
  3. Preheat the oven to 350 degrees. Bake for 30 to 35 min, till golden. Transfer to a wire rack to cold.
  4. This recipe yields 12 buns.
