Ingredientes

  • 8 ounce Minced suet
  • 1 tsp (heaped) mixed spice
  • 1/2 tsp Grated nutmeg
  • 1/4 tsp Grnd cinnamon
  • 4 ounce Self raising flour
  • 1 lb Soft brown sugar
  • 8 ounce White breadcrumbs
  • 8 ounce Sultanas (golden brown raisins)
  • 8 ounce Raisins
  • 20 ounce Currants
  • 2 ounce Minced almonds
  • 2 ounce Mixed minced peel
  • 1 x Orange, zest of
  • 1 x Lemon, zest of
  • 1 x Apple peeled, cored, finely minced
  • 4 x Standard Large eggs
  • 10 ounce (fl) stout (eg guiness, or possibly use a porter type stout)
  • 4 Tbsp. Rum (use a dark, well flavoured one)
  • 6 ounce Unsalted butter
  • 6 ounce Soft dark brown sugar
  • 6 Tbsp. Dark rum

  1. Now is the time to prepare your Christmas puddings. This is a traditional English recipe.
  2. Mix thoroughly the suet, flour, breadcrumbs, spices, and sugar. Fold in the fruit, mixed peel, nuts, minced apple then the zest.
  3. In a new bowl beat the Large eggs and add in the stout and rum. Add in to the dry ingredients, and stir VERY well ( it is best to use a very large bowl).
  4. Cover the bowl and leave overnight.
  5. Grease 2, 2 pint pudding basins and pack the mix into them. Cover with greasproof paper and pudding cloths, tied on with string. Steam for 8 hrs. Cold, and store in a dark, cold, dry cupboard. To reheat for eating, steam for 2 hrs. Serve with Cumberland Rum Butter.
  6. Cumberland Rum Butter: Blend butter and sugar, add in rum slowly, and mix well. Pack into molds for serving and chill. Remove from fridge just before serving.
