Christmast Gift #9: Double Choco-Banana Muffins

This recipe is from Cooking by the Bootstraps (Junior League of Enid, OK) and is credited to Maple Place Bed & Breakfast. (Cooking by the Bootstraps is the sequel to Stir Ups one of the best Junior League cookbooks EVER!)

The cinnamon reminds me of Mexican Hot Chocolate and the bananas put it over the top.

Whisk together the flour, sugar, baking powder and cinnamon in a medium bowl. Set aside.

In a small mixing bowl, stir cocoa into melted butter. Add hot water and mix well. Let stand to cool to room temperature.

Add bananas to the bowl of a stand mixer attached with the whisk attachment. Whisk bananas to mash. Add milk, egg and vanilla and whisk to blend. Add cooled chocolate mixture and continue to whisk.

Remove whisk and stir in flour mixture until just moistened. Fold in chocolate chips.

Spray a large muffin tin with cooking spray. Spoon batter into 12 muffin tins filling each cup about 3/4 full.

Bake at 375 degrees for 22 to 25 minutes. Muffins should spring back lightly when pressed. Remove to wire racks to cool.

Place these in a small basket with a holiday cloth napkin for another great Gift from the Kitchen.

I made these muffins, the “Bugatti” of Flax Muffins, and the blueberry muffins for my early morning breakfast meeting this past week. I am rating these muffins in order of them disappearing from the meeting and the break room at work.

First place: Bakery Style Blueberry Muffins

Second place: Flax-meal Muffins with Yogurt and Raisins

Third place: These Double Choco-Banana Muffins

In fact, I ended up throwing these muffins away today. I thought they were at least a tie for second place.
