Receta Chuda Santula | Mixed Vegetable Poha
Ingredients
- 2 Cups Thin Poha | Flattened rice flakes
- 1 Cup Veggie (of your choice)
- Salt to taste
- 1/2 Cup Peanuts, roasted
- 2 Tbsp Lime juice
- For the tempering
- 2 Tbsp Oil
- 1 tsp Mustard seeds
- 1/2 Cup Finely Chopped Onions
2-3 Green chillies, finely chopped
Instructions
Heat a pan and roast the peanuts and poha separately.
Heat oil in the same Kadai | Pan. Once hot, add the mustard seeds, green chillies, curry leaves and onions.
Saute until the onions turn translucent. Add the veggies and cook them till they become soft.
Then add the roasted poha, peanuts, and salt. Sprinkle very less water, just to moisten the poha.
Turn off the stove, add lime juice and close it for about 5 mins.
The residual heat will moisten the poha.
Serve it with coconut chutney.
