Ingredientes

  • 1 Tbsp. Extra virgin olive oil
  • 1 lrg Onion, peeled and cut into 5-6 wedges
  • 2 x 400 g cans chick peas, liquid removed and rinsed
  • 2 x Cloves garlic, peeled and left whole
  • 1 sprg fresh thyme
  • 50 gm Butter, (2oz)
  • 150 gm Pot natural yogurt
  • 4 pkt Lamb chump steaks
  • 100 ml Dry white wine, (3 1/2fl ounce)
  • 2 Tbsp. Pesto, (2 to 3)

Direcciones

  1. To make the chick pea mash:Heat the oil in a large saucepan then add in the onion and saute/fry till softened. Add in the chick peas, garlic, sprig of thyme and sufficient water to just cover - approximately 150ml ( 1/4 pint) and simmer for 15 min.
  2. In the meantime heat up a frying pan, then cook the lamb for 4 min on each side. Remove and keep hot.
  3. Add in the white wine, then stir in the pesto. Put to one side and keep hot.
  4. Remove the thyme from the chick peas and puree in a food processor.
  5. Then add the butter and natural yogurt, mix to incorporate.
  6. Pile the chickpea mash on individual serving plates, top with a chump lamb chop and drizzle over the pesto sauce. Serve immediately.
