Chunky Fresh Cranberry Relish

Ingredientes

  • 1/2 c. pecan pcs
  • 1 lrg orange - (10 to 12 ounce)
  • 1 bag fresh or possibly frzn cranberries - (12 ounce)
  • 1/2 tsp pure grnd mild red chile - (to 1)
  • 1/2 c. granulated sugar - (to 3/4)

Direcciones

  1. Toast pecans in dry skillet over medium till hot and fragrant. Place in bowl of food processor with chopping blade.
  2. Zest orange and add in peel to food processor. Cut white pith from orange with small knife. Throw away pith and seeds, and cut orange into several chunks.
  3. Add in orange, cranberries, grnd chile and 1/2 c. sugar to processor, and chop coarsely. Taste and add in more sugar as needed, but relish should be refreshingly tart. Refrigerateat least 30 min and serve.
  4. This recipe yields 8 servings.
  5. Comments: Cranberries contribute bright color and tingling taste to any holiday spread. Here they get a little extra zip from some grnd red chile, preferably New Mexican, and more crunch from pecans which flourish in southern New Mexico.
