%20are%20big%20eaters%20and%20when%20I%20serve%20up%20this%20soup%20for%20dinner%20it%20is%20more%20than%20enough%20to%20fill%20up%20my%20greedy%20man%20with%20hollow%20legs%20and%20a%20bottom-less%20stomach.%3C/p%3E%3Cp%3EI%20grant%20you,%20you%20will%20need%20some%20good%20crusty%20bread%20to%20go%20with%20it,%20but%20that%20is%20all.%20I%20know%20it%E2%80%99s%20an%20over-used%20word%20in%20food%20writing,%20but%20this%20is%20truly%20the%20definition%20of%20a%20hearty%20soup.%20Pureed%20soups%20for%20evening%20dinner%20somehow%20don%E2%80%99t%20cut%20it%20%E2%80%93%20more%20like%20a%20drink%20than%20a%20meal%20really.%3C/p%3E%3Cp%3EChunky%20vegetable%20and%20bean%20soup%20with%20parmesan%3C/p%3E%3Cp%3EThis,%20however,%20has%20small%20chunks%20of%20salty%20pancetta,%20root%20vegetables,%20strands%20of%20kale%20and%20filling,%20protein%20rich%20beans%20in%20it.%20This%20is%20my%20favourite%20soup%20of%20all%20time,%20packed%20with%20flavour,%20simple%20to%20make,%20easy%20to%20adapt%20to%20the%20seasons%20and%20all%20using%20ingredients%20you%20may%20find%20in%20your%20store%20cupboard.%20If%20you%20have%20a%20rind%20of%20parmesan%20in%20the%20fridge%20(or%20stashed%20in%20the%20freezer,%20which%20you%20can%20do)%20then%20put%20it%20in%20during%20the%20simmering%20stage%20to%20imbue%20the%20liquid%20with%20its%20savoury%20flavour%20then%20remove%20it%20before%20adding%20the%20greens%20and%20beans.%20This%20amount%20is%20plenty%20for%20two%20people,%20often%20with%20a%20portion%20left%20for%20lunch%20the%20next%20day.%3C/p%3E%3Cp%3EChunky%20vegetable%20and%20bean%20soup%20with%20parmesan%3C/p%3E%3Cp%3EParmesan,%20for%20grating%20on%20the%20top%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3E1.%20Fry%20the%20pancetta%20in%20a%20small%20amount%20of%20olive%20oil%20in%20a%20large%20saucepan%20until%20starting%20to%20crisp.%20Add%20the%20onion,%20carrot%20and%20celery,%20stir%20and%20place%20the%20lid%20on%20to%20allow%20the%20vegetables%20to%20soften.%20This%20will%20take%20about%2010-15%20minutes,%20take%20the%20lid%20off%20and%20stir%20regularly.%3C/p%3E%3Cp%3E2.%20Add%20the%20garlic%20and%20cook%20for%20a%20further%202-3%20minutes.%20Then%20add%20the%20canned%20tomatoes,%20mustard%20and%20hot%20stock.%20Stir%20and%20cook%20with%20lid%20half-covering%20the%20pan%20for%2015%20minutes.%20Taste%20and%20season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3E3.%20Add%20the%20beans%20and%20the%20cavelo%20nero%20and%20cook%20for%205-10%20minutes%20more,%20if%20you%20are%20using%20spinach%20or%20chard%20it%20will%20take%20less%20time%20as%20the%20leaves%20are%20more%20tender.%20In%20summer%20you%20could%20add%20chopped%20courgette%20and%20chopped%20up%20French%20beans%20instead%20of%20kale.%3C/p%3E%3Cp%3E4.%20Serve%20in%20deep%20bowls,%20sprinkled%20with%20grated%20parmesan%20and%20crusty%20bread%20on%20the%20side.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
