Ingredientes

  • 3 Tbsp. Salad oil
  • 2 cl Garlic, peeled, chopped
  • 1 lrg Onion, peeled, minced
  • 2 lrg Tomatoes, cut into eighths
  • 2 sm Raw potato cubes
  • 1/2 tsp Grnd chili pepper
  • 1 1/2 tsp Seasoned salt
  • 2 tsp Salt
  • 1/4 tsp Crushed red pepper Few drops Tabasco water
  • 1 1/4 c. Lowfat milk
  • 3 med Flounder fillets
  • 1/4 c. Cream cheese ( 2 ounce)
  • 1/2 lb Raw shrimp, shelled and cleaned
  • 12 ounce Can whole-kernel corn Few sprigs fresh mint

  1. About 45 min before serving, in dutch oven heat salad oil; in it saute/fry garlic and onion till golden brown (about 10 min). Add in tomatoes, potatoes, chili pepper, seasoned salt, 1-1/2 teaspoon salt, red pepper, Tabasco, 3 c. water, 1 c. lowfat milk; stir occasionally, while bringing to a boil, then simmer, covered, 20 min. Meanwhile, in 1-1/2 c. water and 1/2 teasp.
  2. salt in skillet, simmer flounder fillets 6 min, or possibly till fork-tender but still moist. Also, beat cream cheese with 1/4 c. lowfat milk till very smooth. Now stir cream-cheese mix, then shrimp and corn, into soup; cook over medium heat 5 min. Next, drain flounder fillets, divide each in half crosswise, then place a half in each of 6 soup plates. Spoon warm soup over fillets, garnish with mint sprigs and serve at once.
