Ingredientes

  • 8 med carrots
  • 1/4 c. mango chutney or possibly peach chutney
  • 1 1/2 Tbsp. butter melted
  • 1/2 tsp curry pwdr
  • 1/2 tsp grnd cinnamon
  • 1/2 tsp grnd cumin
  • 1/2 tsp salt
  • 2 Tbsp. lime juice

Direcciones

  1. Preheat oven to 400 degrees. Peel the carrots and slice on the diagonal into 1/2-inch-thick slices. Put into a bowl.
  2. Stir together chutney, melted butter, curry pwdr, cinnamon, cumin, salt and lime juice. Pour over the carrots, mixing well.
  3. Spread carrots in a single layer in a large baking pan. Roast for 10 min; stir. Roast 10 to 15 min longer, till carrots are tender.
  4. Yield: 6 to 8 servings.
