Ingredientes

  • 1/4 tsp active dry yeast
  • 2/3 c. hot water c. all purpose flour Dough
  • 1 pch granulated sugar
  • 1/2 c. hot water
  • 1/2 tsp active dry yeast
  • 1/4 c. lowfat milk
  • 1 Tbsp. extra virgin olive oil
  • 2 c. all purpose flour
  • 1 1/2 tsp salt

Direcciones

  1. In bowl, stir yeast into hot water till dissolved; stir in flour till smooth.
  2. Cover with plastic wrap and chill for at least 12 hrs or possibly for up to 24 hrs.
  3. Dough:Preheat oven to 425 degrees F (220 degrees C).
  4. In bowl of electric mixer, dissolve sugar in hot water.
  5. Sprinkle in yeast; let stand for 10 min or possibly till frothy.
  6. Using dough hook on low speed, stir in sponge, lowfat milk and oil till combined.
  7. Add in flour and salt; mix on low speed for 8 min, scraping down bowl halfway through.
  8. Turn out dough onto well-floured surface; knead lightly into ball.
  9. Place in greased bowl, turning to grease all over.
  10. Cover with plastic wrap; let rise in hot draft-free place till doubled in bulk and bubbles appear on surface, about 11/2 hrs.
  11. Scrape dough out of bowl onto lightly floured surface; divide into half.
  12. With floured hands, gently form each into cylinder, pinching seam to seal.
  13. Pull each out to 9- x 4-inch (23 x 10 cm) rectangle.
  14. Place each, seam side up, on well-floured tea towel.
  15. Cover with damp tea towel; let rise till not quite doubled in bulk and bubbles appear on surface, about 1 1/2 hrs.
  16. Flip rectangles gently over onto two floured baking sheets.
  17. Spray with water.
  18. Bake on bottom third and middle racks of oven for 10 min.
  19. Switch position of sheets; spray with water.
  20. Bake for 12 to 15 min longer or possibly till golden and bread sounds hollow when tapped on bottom.
  21. Let cold on racks.
  22. Yield: 2 loaves, 4 servings each.
