.%20I%20discovered%20this%20quite%20by%20accident%20just%20a%20couple%20of%20hours%20ago%20and%20it%20just%20so%20happened%20that%20I%20had%20this%20ciabatta%20baking%20in%20the%20oven%20at%20the%20very%20same%20time.%20So%20I%20thought%20I'd%20better%20participate.%3C/p%3E%3Cp%3EThe%20purpose%20of%20World%20Bread%20Day%20is%20to%20stir%20up%20awareness%20of%20those%20who%20are%20not%20as%20fortunate%20as%20others.%20Those%20who%20do%20not%20have%20enough%20food%20to%20eat.%20Not%20that%20baking%20this%20loaf%20of%20bread%20will%20do%20anything%20for%20the%20world%20hunger%20problem,%20but%20maybe%20it%20will%20remind%20you%20to%20donate%20food%20to%20your%20local%20shelter%20or%20food%20bank.%3C/p%3E%3Cp%3ESo,%20are%20you%20wondering%20what%20made%20this%20particular%20ciabatta%20loaf%20so%20special%20or%20different%20than%20anything%20I've%20made%20in%20the%20past?%20It's%20due%20to%20the%20%22mother%20dough%22.%20Something%20about%20mother%20dough%20that%20makes%20a%20loaf%20of%20bread......better.%20The%20crust,%20the%20crumb....the%20flavor.%20It's%20almost%20like%20the%20bread%20is%20more...I%20dunno...mature?%20It%20has%20a%20particular%20depth%20to%20it%20that%20I%20have%20not%20experienced%20in%20any%20of%20my%20breads%20in%20the%20past.%20A%20mother%20dough%20is%20basically%20like%20a%20biga,%20only%20it's%20for%20sourdough%20breads.%20It's%20a%20cold%20pre-ferment%20and%20is%20made%20with%20wild%20yeast%20(a.k.a.%20sourdough%20starter)%20and%20has%20anywhere%20from%2050%20-%2080%25%20hydration.%20My%20standard%20sourdough%20starter%20is%20at%20166%25%20hydration%20(1%20cup%20of%20existing%20starter%20with%201%20cup%20of%20flour%20and%201%20cup%20of%20water%20added).%20Btw,%20the%20recipe%20is%20from%20an%20e-book%20called%20Discovering%20Sourdough%20(NorthwestSourdough.com)%3C/p%3E%3Cp%3EMaking%20a%20mother%20dough%20is%20not%20difficult....%3C/p%3E%3Cp%3EMotherdough%20@%2080%25%20hydration%3C/p%3E%3Cp%3E4.5%20oz%20of%20166%25%20hydration%20sourdough%20starter5%20oz%20water%3C/p%3E%3Cp%3E8%20oz%20bread%20flourIn%20a%20good%20sized%20container%20(at%20least%20double%20the%20size%20of%20the%20amount%20of%20ingredients)%20combine%20the%20ingredients%20well%20and%20let%20it%20sit%20at%20room%20temperature%20for%204%20hours.%20Cover%20loosely%20and%20let%20sit%20in%20the%20fridge%20for%202%20or%203%20days.%20Thats%20it.%20No%20fuss,%20no%20muss.%20If%20it%20goes%20beyond%205%20days....well,%20you'll%20need%20to%20start%20over.%20So%20I%20highly%20recommend%20that%20you%20begin%20this%20process%20on%20Wednesday%20or%20Thursday.%20Actually,%20if%20you're%20going%20to%20bake%20the%20bread%20of%20Sunday,%20you%20can%20start%20this%20as%20late%20as%20Friday.%3C/p%3E%3Cp%3EWhen%20you're%20ready%20to%20bake%20your%20ciabatta%20(you%20need%20to%20start%20your%20this%20in%20the%20morning),%20take%20your%20mother%20dough%20out%20of%20the%20fridge.%20You%20will%20see%20a%20nicely%20developed%20gooey%20dough%3C/p%3E%3Cp%3ECover%20it%20up%20with%20plastic%20wrap%20and%20let%20it%20rest%20for%2020%20minutes.%3C/p%3E%3Cp%3EThen....add%20the%20salt%20and%20mix%20the%20dough%20for%205%20minutes%20(using%20the%20lowest%20speed%20if%20you're%20using%20a%20mixer).%20Toward%20the%20end,%20slowly%20add%20the%20remaining%202%20oz%20of%20water.%3C/p%3E%3Cp%3EPlace%20the%20dough%20into%20a%20folding%20trough%20(or%20large%20casserole%20dish)%20and%20let%20it%20sit%20for%204%20hours,%20lightly%20covered,%20at%20room%20temperature.%20Every%20hour,%20fold%20or%20stir%20the%20dough.%20For%20more%20in%20depth%20instructions%20on%20folding%20the%20dough,%20please%20click%20---%3EHERE%3C---%3C/p%3E%3Cp%3EOnce%20the%204%20hours%20are%20up,%20pour%20the%20dough%20onto%20a%20very%20well%20floured%20surface.%20Divide%20the%20dough%20in%20half%20(about%201.5%20lbs%20each).%20Now%20you%20will%20have%20two%20big%20thick%20blobs%20of%20sticky%20dough.%20Take%20one%20of%20the%20blobs%20and%20fold%20it%20over%20on%20itself%20(just%20as%20you%20did%20in%20the%20%22folding%20trough%22)%20and%20place%20it%20on%20a%20well%20floured%20baking%20sheet.%20Do%20the%20same%20to%20the%20other%20blob.%3C/p%3E%3Cp%3ECover%20and%20let%20rest%20for%20about%201%20to%201%201/2%20hrs.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20450'%20F.%3C/p%3E%3Cp%3EUsing%20your%20finger%20tips,%20make%20dimples%20in%20the%20dough,%20then%20gently%20stretch%20the%20dough%20to%20make%20the%20loaves%20a%20big%20longer.%3C/p%3E%3Cp%3EPlace%20the%20baking%20sheet%20into%20the%20oven%20along%20with%20a%20small%20oven%20proof%20dish%20with%20water%20in%20it%20(I%20used%20a%20ramekin).%20Bake%20for%2015%20minutes.%20Turn%20the%20loaves%20around,%20reduce%20the%20heat%20to%20425'%20F%20and%20bake%20for%20another%2015%20-%2020%20minutes%20or%20until%20a%20deep%20golden%20redish%20brown.%3C/p%3E%3Cp%3EAllow%20the%20loaves%20to%20cool%20thoroughly%20before%20slicing.%3C/p%3E%3Cp%3EThen%20watch%20them%20disappear.%20If%20you%20can%20manage%20to%20save%20a%20slice%20for%20yourself,%20which%20I%20hope%20you%20do%20since%20you%20put%20all%20that%20work%20into%20such%20a%20wonderful%20loaf%20of%20bread,%20slather%20it%20with%20butter%20and%20drizzle%20a%20bit%20of%20honey%20on%20it.%20Crumble%20up%20some%20of%20your%20favorite%20cheese%20and%20pour%20yourself%20a%20glass%20of%20wine.%3C/p%3E%3Cp%3ESit%20outside,%20watch%20the%20sunset%20and%20know%20that%20its%20been%20a%20glorious%20day.%20Count%20your%20blessings%20and%20make%20plans%20to%20share%20with%20those%20who%20are%20less%20fortunate%20than%20you%20are.%20There%20are%20countless%20ways%20to%20do%20this...whether%20you%20give%20money,%20donate%20canned%20goods%20or%20drop%20off%20lightly%20used%20items%20to%20a%20thrift%20store%20that%20provides%20for%20a%20shelter.%20It's%20the%20least%20we%20can%20do.%3C/p%3E){kind=link}
