Cilantro Lime Rice
I loved this recipe so much! It’s full of flavor and it’s simple. What more can you ask for. I will warn you if you are not a lime or cilantro person this recipe is not for you. Both flavors are very strong. I put two different version of how you could cook this recipe below. I prepared the rice then folded all the ingredients it but I did find that both flavors were super strong. In the future I might cook everything together depending on how I am planning on serving this recipe. If I am serving it as a side verses as part of a burrito bowl I will cook everything together!
Regardless of how you cook this rice its fantastic and something you will keep wanting to eat assuming you like lime and cilantro like I do!
Ingredients:
- 1 teaspoon vegetable oil
- 2 cups prepared white or brown rice
- 1 lime, juiced
- 2 tablespoons freshly chopped cilantro
- Salt to taste
Directions:
To prepared rice mix in lime juice, cilantro, then salt to taste. Mix well.
Another way of cooking this rice would be to add the ingredients to the pot as the rice is cooking. I think this version would help calm the lime and cilantro flavor. I found that the first version of just stirring it in to be a bit overwhelming in lime flavor!
