Cilantro Mesquite BBQ Chicken Taquitos ~ Baked Taquitos filled with Mesquite Chicken, BBQ Sauce, Pepper Jack Cheese, and Cilantro. Baked until crisp and topped with Sea Salt!

I’m seriously looking at this picture and wondering if it’s too soon to make these little babies. Like honestly. They are amazing. Plus, they are baked so they are healthier than the good old deep fried taquitos. I’m all for “lightening” things up a little when I can! The great thing about this recipe is they still have the crunch factor that a taquito must have, in my opinion.

Plus, these are super easy! You can totally make the chicken the night before and then just mix it all together and you have supper on a busy week night! This is a must in my book. I don’t have time for long, drawn out recipes so I’m always looking for ways to make things faster during meal time!

You know what is pretty awesome? I used Gold’n Plump Mesquite Seasoned Whole Chicken, and I gotta say, Gold’n Plump pretty much rocks my socks off. The company was started right here in the great state of Minnesota. I love hometown companies and it’s something I grew up with, so I trust it. I always know that I’m only going to receive the best when I see their name on the packaging. That goes a long ways in my life. I want to be rest assured that I’m giving my family the best quality products I can.

You know what else is pretty cool? They raise their chickens on family farms. You know why I think this is awesome? I grew up on a family farm. I might not have been raised on a chicken farm, but farms in general are near and dear to my heart as my Dad and younger brother still operate our farm together. It gives me peace of mind that I’m supporting the local farmers whenever I buy Gold’n Plump Chicken. Those family farms only give the best care, fresh, filtered water, and locally sourced nutritious feed. This is why you get such an amazing product every time you buy Gold’n Plump!

Have you heard of Gold’n Plump’s Seasoned Whole Chicken? They’re awesome. They come in this handy dandy little bag, so all you have to do is cut a few holes in the top, stick it in the oven for a couple hours and it comes out perfectly plump and juicy. They even season them for you! I used the Mesquite variety (which is a new) – other flavors include Pesto (also new), Lemon Pepper and Sweet BBQ. I’m excited to try the other flavors!

Before you get to cookin’ … I have to ask: have you seen Gold’n Plump’s Mom Squad commercials? This pretty much wraps it up. The commercials are hilarious! The gals are on a mission to rid the world of bad chicken. After all, good chicken is Gold’n Plump’s mission! Cilantro Mesquite BBQ Chicken Taquitos

Ingredients

Instructions

Preheat oven to 425 degrees.

Mix the chicken, BBQ sauce, cheese, seasoned salt and cilantro in a bowl.

Place tortillas on plate, cover with plastic wrap and warm in microwave 30 seconds so they are easy to roll.

Spread 1/10 of chicken mixture in center of tortilla. Roll up and place seam side down in 9x13 in. glass baking dish. Repeat until all the tortillas are filled. Spray the top of the tortillas with non-stick baking spray. Sprinkle sea salt over the top of the tortillas.

Bake 20-25 minutes or until edges of shells are golden brown.
