Posted on June 12, 2012 by The Southern Lady
These little individual loaves are wonderful served to your guests with coffee. You could also make these for dessert. They are good anytime. I made these in loaves but could be made as a cake or as a big loaf, too.
- 2 cups self-rising flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup brown sugar
- 1/4 teaspoon ground cloves
- 1 tablespoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup oil (I use Canola)
- 4 tablespoons margarine or butter, softened
- 2 eggs
- 1 1/2 cups fresh apples, peeled and grated (I think you could use any apple in this recipe)
- 1 cup buttermilk
- 2 teaspoons vanilla extract
- Mix dry ingredients in a large bowl with a spoon or whisk. Mix oil, butter, eggs, apples, buttermilk and vanilla with mixer. Add dry ingredients and continue mixing. Spray your loaf pans, cake pans or whatever you are making this recipe in well with cooking spray. Fill 1/2 to 3/4 full with apple mixture. Add topping below.
- STREUSEL TOPPING:
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup quick cooking oats
- 1/2 cup self-rising flour
- 3/4 cup walnut pieces or nuts of your choice
- 6 tablespoons butter or margarine, cut into small pieces
- Whisk together topping ingredients except for butter. Sprinkle on top of loaves or cake, add small pieces of butter on topping.
- Bake your cake or loaves in a preheated 350 degree oven 30 to 35 minutes until centers test done. This made 8 small loaves. Pour caramel sauce recipe below over cooled loaves.
- CARAMEL SAUCE
- 1/2 cup white sugar
- 1 cup brown sugar
- 4 tablespoons butter or margarine
- 2 tablespoons corn syrup
- 2 teaspoons vanilla extract
- 1/2 cup milk
Bring to boil on top of stove and let boil for one minute. Remove from stove and add vanilla. Let cool to the consistency you like. It will harden as it cools. Pour over apple cake or loaves. This sauce can be used on any kind of sweet rolls, cakes, etc.
Enjoy!
