It’s because all of a sudden my pumpkin recipes are going crazy. Can anyone say Cinnamon Chip Pumpkin Cookies or Overnight Pumpkin Cheesecake French Toast Casserole? You guys all seem to be in the mood for it. I don’t really blame you, I mean it is a fantastic ingredient so why do we only eat it in the fall? Maybe you are a rebel and enjoy it all year long. Cinnamon Cream Cheese Frosted Pumpkin Cookies
Ingredients
Cookies
- 1/2 c. shortening
- 1 1/2 c. sugar
- 1 egg
- 1 c. pumpkin
- 2 1/2 c. flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt
- Cinnamon Frosting
- 1/4 c. butter, melted
- 1/4 c. shortening
- 1 1/4 c. powdered sugar
- 1 Tbsp milk
- 3/4 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
Preheat the oven to 375 degrees.
In a large mixing bowl cream together the shortening and sugar. Add rest of the ingredients and mix until combined.
Drop by teaspoon onto greased cookie sheet. Baked 10-12 minutes or until edges are golden brown. Let cool on pan 3-5 minutes. Remove to wire rack and let cool.
For the frosting cream together butter and shortening in mixing bowl. Slowly mix in the rest of the ingredients. Spread over cooled cookies.
