%3C/p%3E%3Cp%3EAnyways,%20what's%20the%20point%20to%20all%20of%20this??%20%20Well,%20this%20year%20I%20am%20actually%20celebrating%20Thanksgiving%20and%20with%20some%20fellow%20Canadians%20too!%20%20Hooray!!%20%20I%20am%20in%20charge%20of%20desserts.%20%20I%20searched%20online%20to%20find%20something%20that%20would%20be%20really%20special%20and%20I%20found%20this%20recipe%20for%20these%20tarts%20that%20looked%20really%20nice%20on%20the%20Canadian%20LCBO%20page.%20%20There%20are%20a%20lot%20of%20nice%20looking%20recipes%20on%20there.%20%20It%20sounded%20really%20nice,%20and%20unusual.%3C/p%3E%3Cp%3EThe%20flavors%20were%20very%20autumnal%20sounding%20and%20definitely%20celebratory%20.%20.%20.%20sweet%20roasted%20parsnip%20ribbons,%20a%20lemony%20goat's%20cheese%20filling%20.%20.%20.%20a%20buttery%20oatmeal%20cookie%20crust.%20What's%20not%20to%20like%20about%20that???%20%20Tasty%20and%20quite%20unusual%20I'd%20say!%20%20But%20when%20you%20can't%20find%20tinned%20pumpkin%20to%20make%20a%20pumpkin%20pie%20.%20.%20.%20one%20must%20adapt.%3C/p%3E%3Cp%3EThey%20turned%20out%20quite%20nicely%20.%20.%20.%20but%20I%20wouldn't%20say%20they%20are%20altogether%20transportable.%20%20They're%20quite%20delicate%20and%20so%20I%20am%20going%20to%20make%20something%20else%20to%20take.%20%20But%20if%20you%20are%20going%20to%20be%20staying%20home,%20do%20give%20them%20a%20try,%20and%20not%20just%20at%20Thanksgiving%20either.%20%20I%20think%20these%20would%20be%20fabulous%20at%20any%20special%20dinner,%20but%20only%20if%20you%20are%20eating%20it%20at%20home.%3C/p%3E%3Cp%3E*Cinnamon%20Roasted%20Parsnip%20and%20Lemon%20Goats%20Cheese%20Tarts*%3C/p%3E%3Cp%3EMakes%206%20servings%3C/p%3E%3Cp%3EThis%20unusual%20dessert%20will%20have%20your%20guests%20guessing!!%20%20It's%20delicious!%3C/p%3E%3Cp%3EFor%20the%20crust:%3C/p%3E%3Cp%3Eremovable%20bottoms.%20%20Place%20them%20on%20a%20baking%20sheet.%3C/p%3E%3Cp%3ECombine%20the%3C/p%3E%3Cp%3Ecookie%20crumbs%20with%20the%20melted%20butter%20and%20salt%20for%20the%20crust.%20%20Divide%3C/p%3E%3Cp%3Ethis%20mixture%20equally%20amongst%20the%20tart%20tins.%20Press%20the%20crumbs%20firmly%20into%3C/p%3E%3Cp%3Eeach%20pan%20bottom%20and%20up%20the%20sides%20all%20around.%20%20Bake%20for%208%20minutes.%20%20Set%3C/p%3E%3Cp%3Easide%20to%20cool%20completely.%3C/p%3E%3Cp%3ETo%20do%20the%20parsnips,%20using%20a%20vegetable%3C/p%3E%3Cp%3Epeeler,%20peel%20long%20shavings%20of%20parsnip%20off%20of%20each%20until%20you%20reach%20the%3C/p%3E%3Cp%3Ecore%20inside,%20peeling%20off%20as%20many%20as%20you%20can.%20%20Toss%20the%20ribbons%20of%3C/p%3E%3Cp%3Eparsnip%20in%20a%20small%20casserole%20dish%20along%20with%20the%20lemon%20juice,%20brown%3C/p%3E%3Cp%3Esugar%20and%20cinnamon.%20%20Dot%20with%20butter,%20cover%20and%20bake%20until%20tender,%20about%3C/p%3E%3Cp%3E20%20minutes.%20%20Remove%20from%20the%20oven%20and%20allow%20to%20cool%20completely.%3C/p%3E%3Cp%3EArrange%20these%20roasted%20parsnip%20ribbons%20in%20the%20bottoms%20of%20the%20cooled%20tart%3C/p%3E%3Cp%3Eshells.%3C/p%3E%3Cp%3EBeat%20the%20soft%20goats%20cheese%20together%20with%20the%20sugar.%3C/p%3E%3Cp%3EWhisk%20in%20the%20lemon%20juice,%20lemon%20zest%20and%20the%20egg.%20%20Spoon%20this%20mixture%3C/p%3E%3Cp%3Eover%20the%20parsnips,%20dividing%20it%20equally%20amongst%20the%20tarts%20and%20covering%3C/p%3E%3Cp%3Ethe%20parsnips%20completely.%20%20Bake%20for%2015%20to%2018%20minutes%20until%20set.%20%20Cool%20to%3C/p%3E%3Cp%3Eroom%20temperature.%20%20Chill%20for%20at%20least%20three%20hours%20before%20serving.%3C/p%3E%3Cp%3EIf%20desired%20garnish%20with%20some%20sifted%20icing%20sugar%20and%20a%20few%20sprinkles%20of%20lemon%20zest.%3C/p%3E%3Cp%3ENotes:%20%20Things%20I%20would%20do%20if%20making%20these%20again.%3C/p%3E%3Cp%3E1.%20%20I%20found%20that%20my%20parsnips%20were%20not%20tender%20in%20the%20allotted%20time.%20%20It%20took%20far%20longer%20and%20they%20ended%20up%20being%20more%20candied,%20than%20roasted.%20%20If%20I%20make%20them%20again%20(and%20I%20do%20think%20I%20will)%20I%20will%20cut%20the%20parsnips%20into%20small%20cubes%20or%20batons%20and%20parboil%20them%20for%20a%20few%20minutes%20before%20roasting%20them%20for%20a%20shorter%20period%20of%20time%20so%20that%20they%20are%20more%20roasted%20and%20less%20chewy.%3C/p%3E%3Cp%3E2.%20%20I%20also%20would%20only%20use%20half%20the%20amount%20of%20brown%20sugar%20and%20lemon%20juice%20and%20butter.%20%20I%20felt%20the%20quantities%20were%20far%20too%20much%20for%20the%20amount%20of%20parsnips.%3C/p%3E%3Cp%3E3.%20%20I%20would%20make%204%20tarts%20instead%20of%206,%20making%20them%20a%20bit%20deeper%20and%20having%20the%20final%20cook%20time%20for%20a%20tiny%20bit%20longer%20in%20order%20for%20the%20goats%20cheese%20cheesecake%20mix%20to%20cook%20through.%20%20I%20thought%20these%20tarts,%20whilst%20delicious%20were%20a%20tad%20bit%20on%20the%20skimpy%20side%20as%20far%20as%20filling%20went.%3C/p%3E%3Cp%3E4.%20%20Although%20the%20cookie%20crust%20is%20very%20nice,%20I%20think%20I%20would%20opt%20to%20use%20either%20short%20crust%20pastry%20next%20time,%20or%20filo%20pastry.%20%20I%20didn't%20think%20that%20the%20cookie%20crumb%20crust%20held%20up%20very%20well,%20despite%20baking%20it%20twice.%3C/p%3E){kind=link}
