I’ve been cleaning up my diet for a few months now. I’ll tell my husband that “I mean it this time and to give me a hold me accountable if I wander to the kitchen for a late night snack other than fruit.” He promises to do so.

And then I wander to the kitchen and come up with a dessert that only a crazy woman would call dessert…you know, something like dry oats mixed with nuts, dried fruit, doused in yogurt and honey. Sure, it sounds healthy on paper – but two large bowls of this concoction? Not healthy.

And my husband tries. First tactic: curiosity: “Oh, what are you having? Some pineapple chunks?” My response: “Yeah. Fruit. Some other stuff, too.”

As I serve up the second bowl he tries his second tactic: direct questioning: “Oh, are you really hungry? That was a hearty dinner and you had your fruit already.” My response, through gritted teeth: “Yeah. I’m hungry. I ran 4 miles today and 14 miles yesterday. You try it.”

Poor husband. He tries. So these events have been happening for quite awhile. This time I’m serious. I think. I don’t know how to hold myself accountable. I used to be so good! What are your tips? I thought about spray painting “ARE YOU SURE!?” across my kitchen walls but that might ruin the decor.

I baked these cinnamon sugar donut muffins weeks ago. I made them for my biology students the morning of their final exam. I really, really want to instill healthy habits in my students. They eat like crap. But they’d rather go hungry than eat healthy stuff that I bring them.

They loved these muffins. They were super simple to make. They were fluffy and sweet. They were perfectly unhealthy. Good for a last-day-of-the-year celebration.

Cinnamon Sugar Donut Muffins (adapted from a recipe seen on The Way to His Heart..)

For the muffins:

Preheat the oven to 350 F. Whisk together the flour, baking powder, salt, nutmeg, and cinnamon.

In a separate, large bowl, combine oil, sugar, egg, vanilla extrat and milk.

Add dry ingredients to wet ingredients and stir only to combine.

Coat muffin pan with nonstick cooking spray and divide the batter evenly among the cups.

Bake at 350 F for 15 to 20 minutes.

Run a knife around the sides of the muffin and shake them out of the pan while still hot.

Melt butter in a bowl. Combine the sugar and cinnamon in another bowl.

Dip muffins in butter, then into the cinnamon-sugar mix. Let cool.
