Citrus Crusted Yellowfin Tuna

Ingredientes

  • 3 Tbsp. Finely minced jalapeno
  • 2 Tbsp. Finely minced ginger
  • 1 Tbsp. Minced garlic
  • 3 Tbsp. Lime zest
  • 3 Tbsp. Lime juice
  • 1 Tbsp. Coarse salt
  • 1 Tbsp. Crushed black peppercorns
  • 2 Tbsp. Sugar
  • 1 c. Dry white wine
  • 4 x Tuna steaks, 1-1/2 inches thick (6 ounce.)
  • 2 Tbsp. Extra virgin olive oil

Direcciones

  1. To prepare the crust: In a small saucepot combine the jalapeno, ginger, garlic, lime zest and juice, salt, peppercorns, sugar, and white wine. Simmer the mix for 5 min on medium heat. Most of the liquid will be absorbed. Remove from the heat and cold.
  2. To prepare the tuna: Pack the crust mix onto the tuna steaks.
  3. Let them absorb some of the flavors for 20 min at room temperature before cooking. Preheat a heavy pan very warm for 5 min. Drizzle the tuna with extra virgin olive oil, then sear for only about 30 seconds on each side. Serve.
