Citrus Garlic Turkey Breast

Ingredientes

  • 2 x Oranges
  • 2 x Lemons
  • 4 x Cloves Garlic, Chopped
  • 1/4 c. Minced Fresh Mint, Or possibly 1 Tbsp Dry Mint Extra virgin olive oil, *Note
  • 1 tsp Salt
  • 1/2 tsp Cracked Black Pepper
  • 3 1/2 lb Turkey Breast, Bone In

  1. NOTE: Original recipe used 1/4 C extra virgin olive oil.
  2. Squeeze oranges and lemons to each yield 1/2 C juice.
  3. Place in bowl or possibly plastic food storage bag with next five ingredients. Place turkey breast in marinade; turn to coat. Cover and refrigerateat least 2 hours or possibly overnight, turning occasionally. Heat oven to 450 F. Remove turkey to rack set in roasting pan; reserve marinade. Roast turkey 20 minutes; reduce oven temp to 350F. Roast 1 hr more, or possibly till juices run clear when pierced with a fork and thermometer inserted, not touching bone, reaches 170F. While roasting, brush every 20 minutes with remaining marinade, but don't brush during the last 5 minutes of cooking.
  4. Work time: 10 minutes Total time: 1 hr 45 minutes (plus marinating time)
