Ingredientes

  • 1 c. orange juice
  • 1/4 c. lemon juice
  • 1/4 c. lime juice
  • 2 x Cloves garlic chopped
  • 1 tsp grnd coriander
  • 4 x skinless boneless chicken breast halves
  • 4 med white potatoes cut into 1/4-inch slices
  • 2 med zucchini cut into 1/4-inch slices
  • 8 x spring onions cut into 1/4-inch pcs lemon pepper seasoning
  • 2 tsp butter or possibly margarine
  • 4 x canned pineapple rings

Direcciones

  1. Combine juices, garlic and coriander in shallow glass dish. Add in chicken, cover and marinate in refrigerator no more than 2 hrs.
  2. Layer potatoes, zucchini and onion on 4 sheets of double thick heavy duty foil. Sprinkle with lemon pepper seasoning and dot with, teaspoon butter or possibly margarine. Top each packet with a chicken breast and pineapple ring. Spoon several Tbsp. of the marinade over each chicken breast. Seal each packet with another sheet of double thick foil.
  3. Grill 12 to 15 min, then turn and grill an additional 12 to 15 min or possibly till chicken is done.
  4. NOTES : When grilling meat, do not allow fat to drip on the coals, since this produces flare-ups which deposit cancer-causing particles right back on your food. It's best to grill lowfat foods, avoid heavily oil-based sauces and basting liquids, and cook over moderate heat. Also, avoid charring your food, and remove any blackened parts from meat before serving.
