Receta Citrus Salad with Roasted Beets, Ricotta and Candied Walnuts
Ingredientes
- 2 pounds baby beets, washed and trimmed
- 2 to 3 tablespoons olive oil
- Sprigs of fresh thyme
- Kosher salt and freshly ground black pepper
- 3 oranges, zest into long strips and cut into supremes
- 1 cup water
- 2 to 3 handfuls of sugar
- ½ cup walnuts
- 1/8 cup sugar
- 1 cup good quality ricotta
- 1/8 cup milk (optional)
- 4 to 5 cups organic mixed greens, washed, dried and hand torn
- ½ cup balsamic vinaigrette
- 2 tablespoons fresh lemon juice (use the juice squeezed from orange scraps and add lemon juice to taste)
- salt and pepper to taste
