Citrus Spiced Blueberry Jam

Ingredientes

  • 2 1/2 c. coarsely minced blueberries
  • 2 1/2 c. granulated sugar
  • 1 c. honey
  • 1 Tbsp. fresh-squeezed lemon juice
  • 1/2 tsp grnd cinnamon
  • 1/2 tsp grnd nutmeg
  • 1/2 tsp fresh orange peel (orange part only)
  • 1 x (3-oz) pouch liquid fruit pectin

Direcciones

  1. Wash 4 half-pint jars. Keep warm till needed. Prepare lids as manufacturer directs.
  2. Combine the blueberries, sugar, honey, lemon juice, cinnamon, nutmeg and orange peel in a large, non-aluminum pot. Bring to a full rolling boil over high heat and boil hard for 2 min, stirring constantly. Remove from heat and stir in pectin.
  3. Ladle the warm jam into 1 warm jar at a time, leaving 1/4 inch head space. Wipe jar rim with a clean, damp cloth. Attach lid. Fill and close remaining jars.
  4. Process in a boiling-water canner for 10 min (15 min 1,000 to 6,000 feet; 20 min above 6,000 feet).
