Classic Mushroom Soup

Ingredientes

  • 1 1/2 cups sliced mushrooms
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp margarine
  • 3 cups vegetable broth
  • 2 tbsp flour
  • 1 cup sour cream
  • 1 cup milk or soy milk
  • salt and pepper to taste

Direcciones

  1. Sautee mushrooms, onion and garlic in the vegan margarine for 3 to 5 minutes, until onions turn soft.
  2. Put the mushrooms, onions and garlic in a crock pot and add the vegetable broth.
  3. Cover and cook on low for 6 to 8 hours.
  4. Add the remaining ingredients and cook on high for another 30 minutes, or until soup thickens.
  5. Add more salt and pepper to taste
