Receta clean almond zucchini bread
Zucchini bread is classic, it's so good, and goes perfect with almost any kind of spread. Yes, I've tried it with peanut butter, and better yet even my Dark Chocolate Dreams PB from iherb.com. I loved this PB so much I tweeted iherb.com to see if they'd marry me, they said yes...
Does this mean unlimited dark choc dreams peanut butter...forever?
if you haven't tried zucchini bread before let this recipe be the one you go to first. It's super clean and healthy and only 64 calories per piece. Score!
Ingredients//
- 1 1/2 cup oat flour
- 2 natural sweetener packets
- 2 tbsp unsweetened almond milk
- 2 mini zucchini's - grated (there is a photo below to see what I mean by mini)
- 1 small handful of raw almonds - I probably had about 25
- 1 tbsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
Directions//
Measure and pour all dry ingredients into a bowl
Measure and pour all wet ingredients into a separate bowl
Grate zucchinis
Chop the raw almonds into fine pieces - You could be the hell of them in a bag too...I think? Might need a hammer...
Pour wet ingredients into dry ingredient bowl
Mix well, then add the grated zucchini and almonds into the (now) one bowl of ingredients
Use coconut oil to "grease" (grease lightenin, go grease lightenin) into a pan - I used a square one, but feel free to use a loaf pan, muffin tins, whatev!
Pour batter into the grease lightenined pan
Bake on 325 degrees for 23 minutes, check half way through and do the fork test - Poke a fork into the bread, if it comes out clean - the little beauty is done, if not, leave it in for another 2 minutes and check again.
Remember the food still bakes a bit after taking it out of the oven because the pan is so hot so try not to leave it in the oven for too too long, no one likes a black zucchini - no racism, that's just the truth.
Enjoy! I cut mine into long strip-like pieces and served it warm with a tad bit of greek yogurt on top as "icing."
