Bread. It’s supposedly the staff of life. But for me, it’s a curse on my blood sugar.

Unfortunately, I LOVE bread! I love everything about it. The soft sponginess of the gluten, the soft pillowy texture when I bite into it and of course, the endless number of topping possibilities. What’s not to love?

But as I get older, I’m learning that loving something, doesn’t mean it will love me back, and that is definitely the case with bread.

I wasn’t anywhere near perfect with the low carb eating and part of the reason was bread. It’s so hard to walk past a perfectly delectable loaf of bread!

I’ve made an attempt at low carb bread before, and while it wasn’t too bad, it just didn’t hit the spot the way regular bread does. The texture and flavor just didn’t even come close to what I was hoping for.

So recently, I ran across and adapted this recipe for Almond Butter Bread. It sounded too good to be true. I didn’t have any almond butter on hand (which is actually lower in carbs than peanut butter), so I used peanut butter instead. I also added a couple ingredients to help with flavor.

The truth is, I thought I was making a sweet bread, forgetting that most breads these days have added sugar in some form. But after the first bite, I realized I had a pretty darn good loaf of regular bread!

I will try this again with almond butter just to compare flavors and reduce the carbs even further. I have a feeling the almond butter will be much milder in flavor. But for now, this is delicious and there are no grains involved! This is wonderful Paleo bread too!

Clean Eating Peanut Butter Bread

Ingredients:

Directions:

Mix all ingredient together until smooth.

Pour into a parchment-lined loaf pan.

Bake at 325 F. for about 30-40 minutes. The bread is done when a knife inserted in the center pulls out clean.

Number of servings (yield): 1 standard loaf
