Like it or not, for better or for worse, summer is upon us here in northern California. As many of you know, this is NOT my favorite time of year. Me and heat just do not get along. Especially humid heat, which there is a lot more of now that I’m living so close to the coast. But that being said, there are some things about summer that I truly enjoy. Fresh produce being at the top of that list.

There’s just nothing like a huge bowl of leafy goodness to refresh you after a hot day. Salads are a fantastic way to not only get all your nutrients (eat the rainbow!), but also a great way to keep your kitchen cool and stove in off-mode.

Add to that some seasonal fruits, and you’ve got yourself one heck of a delicious, refreshing and cooling meal.

NOTE: For this salad, I used my recent Clean Eating Raspberry Vinaigrette Dressing. It went very well with this salad.
