Receta CNY Fortune Stir-fry Chicken with Ginkgo Nuts ( 发财鸡炒白果 )
This dish can be part of your casual home-cooked meal, but when plated with some colours, the simple chicken meal is instantly transformed into a classy dish fit for a festive occasion like the Lunar New Year.

- Rinse chicken and dice into cubes, and marinate for about an hour.
- Clean vegetables and cut into small pieces.
- Remove " veins " from the peas and rinse thoroughly.
- Cut orange into slices and place onto serving plate neatly.
- Heat 1 tbsp of oil and stir fry ginger with sweet peas till the veggies turn bright green. Transfer to plate with orange slices.
- Heat another tbsp of oil and sautéed garlic and onion till fragrant.
- Add chicken, capsicums, ginkgo nuts, sesame oil and oyster sauce. Mix well and stir fry for about 4 - 5 minutes, adding wine last. Do not cook chicken for too long or they will turn tough.
