Best line I ever heard was Dennis Leary when he stated; "No wonder the French hate us. They gave us the croissant and we turned it in to the "Cra'samwich" Funny guy. Here is my English recipe for Coq Au Vin....and btw, France? You're all very welcome for not speaking German today....just saying.

Ingredientes

  • 4 slices of thick cut apple wood bacon. Any bacon is fine really, I just happen to like apple wood.
  • 2 tbs butter
  • 1 quartered broiler frying chicken
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 medium onion
  • 1/2 - 1 lbs of mushrooms. I like mushrooms
  • 3 shallots
  • 1 minced garlic clove
  • 2 tbs flour
  • 2 cups of red wine
  • 1 bay leaf
  • 1 tsp dried thyme

Direcciones

  1. In a dutch oven, cook the bacon down to render out the fat.
  2. Remove the bacon to paper towels and reserve for later.
  3. Add butter to the bacon fat....How could you NOT love this step?
  4. Salt and pepper your chicken and then saute until all sides are golden brown.
  5. Remove chicken and reserve. Have it sit next to the bacon. He's lonely
  6. Turn down the flame to a simmer and add onions and mushrooms. Cover the pot and cook for about 15 minutes
  7. Pre heat your oven to 400 degrees
  8. Add the garlic and shallots for about 1 minute. When you can smell it, its done
  9. Pour off all but 2 tbs of fat. Add flour to make a roux.
  10. Add wine, stir until thickened.
  11. Add back the chicken, crumbled bacon, bay leaf and thyme.
  12. Cook, covered in the oven for about 1 1/2 hours, or until the chicken is fork tender
