Ingredientes

  • 1 lb Boneless, skinless chicken breasts
  • 2 Tbsp. White wine vinegar
  • 1 Tbsp. Dijon-style mustard
  • 2 Tbsp. Finely minced shallots
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 c. Extra virgin olive oil
  • 2 Tbsp. Crumbled blue cheese
  • 6 c. Field greens
  • 2 lrg Tomatoes, cut in chunks
  • 1 x Avocado, cut in chunks
  • 3 slc Bacon, cooked, crumbled

Direcciones

  1. Add in just sufficient water to skillet to cover chicken. Bring to simmering. Add in chicken. Cover; simmer till cooked through, 15 min. Let cold completely. Tear chicken into thin strips.
  2. Prepare dressing: Combine vinegar, mustard, shallots, salt and pepper in bowl. Whisk in oil in slow stream till well blended. Stir in cheese; set aside.
  3. To serve: Arrange greens on platter with chicken, tomatoes, and avacado.
  4. Top with bacon. Drizzle with dressing immediately.
