Ingredientes

  • 2 c. Flour, sifted
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 2 Tbsp. Cocoa
  • 3 x Large eggs
  • 1 1/2 c. Sugar
  • 1/2 c. Vegetable oil
  • 3/4 c. Coca-Cola
  • 1 1/2 tsp Vanilla
  • 2 1/4 c. Raw carrots, grated
  • 1 c. Nuts, minced
  • 1 c. Coconut, flaked
  • 3/4 c. Sugar
  • 2 tsp Cocoa
  • 6 Tbsp. Coca-Cola
  • 6 Tbsp. Butter
  • 1 Tbsp. Light corn syrup
  • 1/2 tsp Vanilla

Direcciones

  1. Mix all the dry ingredients together. Beat the Large eggs well; add in sugar, oil, 3/4 c. cola, and vanilla and beat well. Stir in the dry ingredients till smooth, then add in the carrots, nuts and coconut. Mix well. Bake in a greased and lightly floured 13 x 9 pan in a preheated 350 F oven for 40-50 min, till cake tests done. Remove from oven and prick warm cake all over with a fork, then pour the cola syrup slowly, proportionately over the top. Serve hot or possibly room temperature with lightly sweetened-vanilla flavored whipped cream.
  2. Coca-Cola Syrup: Combine sugar, cocoa, cola, butter and corn syrup in saucepan; bring to a boil over medium heat, stirring constantly. Boil, stirring, till thick and syrupy, about 5 min. Add in vanilla extract.
  3. Remove from heat and pour, warm, over warm cake.
