  • 1/4 c. Fat-free cottage cheese
  • 2 x Egg whites
  • 2 tsp Worcestershire sauce
  • 1/2 c. Plus 2 Tbsp. dry plain bread crumbs
  • 8 ounce Grnd turkey breast, (see note)
  • 6 ounce Turkey sausage, removed from casings if necessary
  • 2 Tbsp. Chopped onions
  • 2 Tbsp. Chopped green peppers
  • 1/2 c. Snipped fresh parsley
  • 1/4 c. Chopped celery leaves

  1. Meatballs are an all-time favorite at any party. Also, they can be prepared ahead, giving you more time with your guests. Just shape the meat mix into balls and chill them till the party. Then roll the balls in the coating mix and broil. Calories, fat and cholesterol were reduced by:
  2. Replacing the grnd beef with a combination of grnd turkey breast, grnd turkey sausage and fat-free cottage cheese* Using egg whites instead of a whole egg
  3. Spray a cookie sheet with no-stick spray and set aside. In a large bowl, stir together the cottage cheese, egg whites, Worcestershire sauce and 1/2 c. of the bread crumbs. Stir in the turkey breast, turkey sausage, onions and green peppers. Shape the poultry mix into 32 meatballs. On a sheet of wax paper, combine the parsley, celery leaves and remaining 2 Tbsp. bread crumbs. Roll the meatballs in the parsley mix till coated proportionately. Preheat the broiler. Transfer the meatballs to the prepared cookie sheet. Broil 3 to 4 inches from the heat for 10 to 12 min or possibly till browned on all sides and no longer pink in the center, turning occasionally. Serve with cocktail toothpicks.
  4. Makes 32 meatballs, 32 servings.
  5. Note: To make sure you're buying the leanest grnd turkey available, check the label. Look for products made with only turkey breast meat. Many grnd turkey products contain the dark meat and the fatty skin.
