Receta Coconut and Peanut Sambar
Ingredients:
- Coconut – 2 tsp, finely chopped
- Peanuts – 1/2 tblsp, dry roasted
- Turmeric Powder – 1/4 tsp
- Sambar Powder – 2 tsp
- Rice Flour – 1 tsp
- Tamarind Extract – 1 cup
- Salt as per taste
- Oil as required
- For tempering:
- Mustard Seeds – 1/2 tsp
- Fenugreek Seeds – 1/2 tsp
- Toor Dal – 1 tsp
Curry Leaves – few
Method:
1. Place the tamarind extract over medium flame.
2. Add salt, turmeric powder and sambar powder.
3. Simmer for 2 minutes.
4. Heat little oil in a pan.
5. Fry the tempering ingredients for 30 seconds.
6. Add peanuts, coconut and stir-fry for a minute.
7. Add this to the tamarind extract and bring to a boil.
8. Remove and serve hot with rice.
