¼ cup coconut & peanut spread (I used Earth Balance) 3 Tablespoons honey 1 scoop Protein Powder (I used Designer Whey Vanilla) 2 Tablespoons Ground Flax Seed (I used Spectrum)
Combine all ingredient in your stand mixer. Using the paddle attachment mix until smooth Roll into balls Refrigerate until ready to eat 3.5.3208
By far my favorite of all the energy bites I made in the last month. I found this new peanut butter that’s made with coconut oil. It was so delicious I could eat it right out of the jar. But don’t worry, I didn’t. Well not the whole jar anyway.
As a matter of fact, both the baby girl and her boyfriend were eyeing that same jar of peanut butter. I could tell they were going to snatch it up. Luckily I got to it before them and made these delightful energy bites. The perfect energy boost right before my workout.
And as long as you don’t tell anyone, I may have snapped a few on my way out the door as I was heading for work the other morning.
