This week, I'm relishing a vacation with my husband. We're not traveling far. In fact, we're enjoying the sights (and restaurants) in our own backyard. When I'm "Stay-cationing", Craig and I will dine out more often than usual. We prefer a having a leisurely lunch in places like Big Sur, Carmel Valley or Pebble Beach. We'll make a pit stop, or two, that are errand driven.
Yesterday, we had a busy day, and I was happy to arrive home by late afternoon so that I could catch up on reading magazines and new cookbooks. Before I knew it, my stomach was telling me that it was 6:00 and I needed to think about making something for dinner.

%20in%20our%20own%20backyard.%20%20%20When%20I'm%20%22Stay-cationing%22,%20Craig%20and%20I%20will%20dine%20out%20more%20often%20than%20usual.%20We%20prefer%20a%20having%20a%20leisurely%20lunch%20in%20places%20like%20Big%20Sur,%20Carmel%20Valley%20or%20Pebble%20Beach.%20%20We'll%20make%20a%20pit%20stop,%20or%20two,%20that%20are%20errand%20driven.%3C/p%3E%3Cp%3EYesterday,%20we%20had%20a%20busy%20day,%20and%20I%20was%20happy%20to%20arrive%20home%20by%20late%20afternoon%20so%20that%20I%20could%20catch%20up%20on%20reading%20magazines%20and%20new%20cookbooks.%20%20Before%20I%20knew%20it,%20my%20stomach%20was%20telling%20me%20that%20it%20was%206:00%20and%20I%20needed%20to%20think%20about%20making%20something%20for%20dinner.%3C/p%3E%3Cp%3EI%20had%20some%20chicken%20breasts%20in%20the%20fridge,%20so%20I%20looked%20for%20inspiration%20on%20%20Pinterest!%20%20%20If%20you%20haven't%20come%20aboard%20on%20the%20Pinterest%20craze,%20be%20warned%20that%20it's%20an%20addicting%20website.%20%20I%20have%20discovered%20all%20kinds%20of%20new%20blogs,%20and%20it's%20fun%20to%20see%20what%20my%20other%20blogger%20friends%20are%20pinning.%20%20Thanks%20to%20my%20blogger%20friend%20Cathy,%20at%20Wives%20With%20Knives,%20she%20had%20pinned%20a%20recipe%20for%20Coconut%20Chicken%20(from%20Pennies%20on%20a%20Platter)%20%20that%20looked%20easy%20and%20appetizing.%3C/p%3E%3Cp%3EThe%20recipe%20had%20simple%20ingredients,%20that%20I%20had%20on%20hand--%20%20my%20chicken%20breasts%20were%20quite%20plump%20and%20large.%20%20So%20I%20cut%20them%20in%20half,%20because%20I%20didn't%20want%20to%20wait%2030-40%20minutes%20for%20the%20chicken%20to%20be%20ready.%20NOTE:%20You%20could%20easily%20cut%20the%20chicken%20into%20bite-size%20bits,%20as%20appetizers%3C/p%3E%3Cp%3EI%20had%20a%20bag%20(of%20rather%20outdated,%20to%20be%20honest)%20sweetened%20coconut,%20flour,%20salt%20&%20pepper%20and%20garlic%20powder.%3C/p%3E%3Cp%3EI%20had%20one%20last%20jar%20of%20my%20homemade%20apricot-pineapple%20jam.%20%20The%20recipe%20listed%20apricot%20jam,%20but%20my%20absolute%20favorite%20jam%20is%20apricot-pineapple.%20%20I%20must%20make%20more,%20this%20summer.%20%20Anyway,%20%20I%20added%20two%20tablespoons%20of%20Dijon%20mustard,%20to%201/4%20cup%20of%20jam.%20%20I%20felt%20that%20was%20just%20a%20little%20too%20much%20Dijon%20for%20my%20liking%20as%20it%20overpowered%20the%20delicious%20flavor%20of%20the%20jam.%20%20I%20simply%20added%20another%201/4%20cup%20of%20jam,%20and%20all%20was%20good.%20%20To%20be%20honest,%20I%20think%20just%20pure%20jam%20would%20have%20been%20just%20fine--%20more%20on%20that%20later.%20I%20set%20it%20in%20the%20fridge%20to%20chill.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400F.%3C/p%3E%3Cp%3EI%20beat%20two%20eggs%20(the%20recipe%20called%20for%20one,%20but%20I%20didn't%20want%20to%20run%20out)%20and%20then%20dip%20the%20chicken%20into%20the%20dry%20ingredients.%3C/p%3E%3Cp%3ECoat%20each%20piece%20of%20chicken,%20and%20gently%20press%20the%20coconut%20mixture.%3C/p%3E%3Cp%3EPlace%20the%20chicken%20on%20either%20parchment%20paper%20or%20a%20silicone%20baking%20mat.%3C/p%3E%3Cp%3EThe%20instructions%20said%20to%20melt%201/2%20cup%20of%20unsalted%20butter.%20%20Necessity%20is%20the%20other%20of%20invention,%20because%20to%20my%20horror,%20I%20realized%20I%20was%20almost%20out%20of%20butter!%20%20I%20melted%20my%20last%201/4%20cup%20of%20unsalted%20butter%20and%20added%201/4%20cup%20of%20extra-virgin%20olive%20oil.%20%20(I%20think%20that%20could%20be%20reduced.)%3C/p%3E%3Cp%3EThen%20drizzle%20over%20each%20piece%20of%20chicken..%3C/p%3E%3Cp%3EDone!%3C/p%3E%3Cp%3EA%20little%20messy,%20but%20it's%20ready%20to%20go%20into%20the%20oven.%20%20I%20set%20the%20timer%20for%2015%20minutes.%3C/p%3E%3Cp%3E...then%20flipped%20them%20over.%3C/p%3E%3Cp%3EThey%20were%20lightly%20golden.%20%20Can%20I%20leave%20well%20enough%20alone?%20No!%3C/p%3E%3Cp%3EI%20wanted%20extra-crunch,%20so%20I%20turned%20on%20the%20broiler%20and%20placed%20the%20rack%20on%20the%20highest%20position.%20Coconut%20can%20burn%20fast,%20so%20I%20watched%20the%20chicken%20closely--%20after%202%20minutes,%20I%20flipped%20them%20over.%3C/p%3E%3Cp%3EI%20present%20to%20you%20extra-crispy%20coconut%20chicken.%20%20In%20less%20than%2045%20minutes%20from%20start%20to%20finish--%20including%20photographing,%20and%20wiping%20off%20flour%20and%20egg%20from%20my%20camera.%3C/p%3E%3Cp%3EThis%20is%20family%20friendly.%20%20Kids%20would%20love%20it,%20too.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20I%20dedicate%20this%20recipe%20to%20my%20BFF%20of%2035%20years.%20%20Patty%20loves%20coconut,%20and%20I%20am%20absolutely%20sure%20that%20she%20would%20love%20this%20dinner.%20%20This%20dinner%20is%20really%20fast%20and%20easy%20to%20make.%20I%20loved%20the%20crunchy%20texture%20of%20the%20coconut.%20%20The%20apricot-pineapple%20jam%20was%20perfect%20with%20each%20bite.%20Craig%20loved%20it,%20too.%20%20For%20a%20moment,%20I%20thought%20that%20shrimp%20would%20be%20a%20great%20substitute,%20but%20I'd
