Coconut Cranberry Orange Cookie

Ingredientes

  • 1 1/2 cups unsalted butter at room temperature
  • 2 cups sugar
  • 1 Tbsp. grated orange peel
  • 2 tsp. vanilla
  • 3 1/4 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 cup dried cranberries
  • 1 1/2 cup sweetened flaked dried coconut

Direcciones

  1. In a large bowl with mixer on medium, beat butter, sugar, orange peel and vanilla together until smooth. In separate bowl, sift flour, salt, and baking power together. Add dry ingredients to the butter mixture, stir to mix then beat on low speed until dough comes together, about 5 minutes. Mix in cranberries and coconut. Shape dough into 1" balls and place 2" apart on cookie sheet. Bake in oven at 350° F until edges just begin to turn brown, 8-11 minutes. Let cool on sheets for 5 minutes the cool on racks.
