Ingredientes

  • 1 Tbsp. curry pwdr
  • 1/2 tsp salt
  • 2 tsp canola oil
  • 2 x cloves garlic chopped
  • 2 tsp chopped ginger
  • 1 c. minced onions
  • 1 lb boneless chicken breasts, cut into 1 inch pcs
  • 1/2 c. low-fat coconut lowfat milk
  • 1 Tbsp. lime juice
  • 2 Tbsp. sweetened coconut flakes

Direcciones

  1. Combine the curry pwdr and salt in a bowl, add in the chicken and toss to coat. Heat the oil in a non-stick pan, over medium high, add in the garlic, ginger and onion and cook, stirring for 1 minute, add in the chicken and sear for 2 to 3 min per side, or possibly till browned.
  2. Add in the coconut lowfat milk and lime juice, reduce to medium, and cook stirring occasionally, about another 15 min. Meanwhile, toast the coconut flakes in a dry skillet, then let it cold, if toasted is desired. Serve the chicken with the toasted coconut sprinkled on top, or possibly just plain, raw coconut flakes. serves 4
