Ingredientes

  • 1 qt vegetable oil
  • 30 lbs fresh chicken tenders (washed)
  • 1 gal flour
  • 1 can lime pepper seasoning
  • 1 cup red curry paste
  • 1 gal lo-sodium chicken broth
  • 1 bag diced onions
  • 1 stalk sliced celery
  • 8 medium sliced red peppers
  • 12 ans coconut milk
  • 10 cloves garlic, smashed
  • 1 jar ginger

Direcciones

  1. Wash tenders and pat dry.
  2. Toss tenders in flour/lime pepper mix.
  3. Saute tenders in oil to golden browwn and set aside. In leftover oil saute onion and celery until soft. Add red peppers, garlic, and ginger, saute 5 minutes.
  4. In a separate pot, mix coconut mil, chicken broth, curry paste, add sauteed vegetables and seasoning. Reduce by 1/4 or thicken slightly.
  5. Add chicken, bring to temperature. Serve with fresh parsley.
