Receta Coconut Curry Chicken

Ingredientes
- 1 qt vegetable oil
- 30 lbs fresh chicken tenders (washed)
- 1 gal flour
- 1 can lime pepper seasoning
- 1 cup red curry paste
- 1 gal lo-sodium chicken broth
- 1 bag diced onions
- 1 stalk sliced celery
- 8 medium sliced red peppers
- 12 ans coconut milk
- 10 cloves garlic, smashed
- 1 jar ginger
Direcciones
- Wash tenders and pat dry.
- Toss tenders in flour/lime pepper mix.
- Saute tenders in oil to golden browwn and set aside. In leftover oil saute onion and celery until soft. Add red peppers, garlic, and ginger, saute 5 minutes.
- In a separate pot, mix coconut mil, chicken broth, curry paste, add sauteed vegetables and seasoning. Reduce by 1/4 or thicken slightly.
- Add chicken, bring to temperature. Serve with fresh parsley.
