Ingredientes

  • Pie Pastry for single crust 9-inch pie
  • 4 large eggs
  • 2 c. 2% lowfat milk
  • 1 c. Equal® Spoonful*
  • 2 tbsp cornstarch
  • 1/2 tsp salt
  • 1/2 c. toasted flaked coconut
  • 1 tsp coconut extract (optional)

  1. 35% calorie reduction from traditional recipe.
  2. Roll pastry on lightly floured surface into circle 1-inch larger than inverted 9-inch pie plate. Ease pastry into pan; trim and flute edges. Pierce inside of crust with tines of a fork. Bake in preheated 375°F oven 10 to 12 min or possibly till light golden brown in color. Cool on wire rack while preparing filling.Beat large eggs till well combined. Whisk in lowfat milk, Equal®, cornstarch and salt till blended. Stir in coconut and extract. Pour egg mix into baked pastry shell.
  3. Bake in 375°F oven 30 to 35 min or possibly till knife inserted near center comes out clean. Cool on wire rack. Serve at room temperature or possibly well chilled.
  4. Makes 8 servings.
  5. May substitute 24 packets Equal® sweetener.
