Coconut Fish: An Exciting Trini Creation
Cooking inspiration comes in varied ways to me and this coconut fish recipe was no different. I’m always on the lookout for different approaches to cooking fish. Since there are already a few main techniques we use here in Trinidad and Tobago, this one for me is a little creative approach to using coconut in a fish recipe. Normally, coconut milk is used in stewing meats on the island, but what about steaming?
How can we incorporate coconut milk in steaming? Easy. Borrow a few ideas from Oil Down, since that is a way we steam fish in coconut milk, then put a few creative twists and experiment with a new herb or in my case leaf and you would have an excellent recipe. In my case I opted to use bay leaf as my new twist. The bay leaf imparted an exotic taste to the dish that really kicked the other flavours up a notch.
- Coconut Fish Recipe
- COCONUT FISH
- 1/2 cup coconut milk
- 2 lbs fish
- 3 tbsp green seasoning
- 1 lg sweet pepper (yellow, red, or green or a combination)
- half of a small onion
- 2 cloves garlic, chopped
- 1 bay leaf
- salt to taste
- 2 tbsp oil
Season fish with green seasoning and let marinate for 25 – 30 minutes
Chop the sweet pepper into chunks and slice the onion lengthways.
Heat the oil and saute the garlic for about 1 minute
Add the fish and cook for 2 minutes
Add the coconut milk…
Then the sweet peppers and onion
Finally add the bay leaf and salt to taste. Cover, reduce heat and let simmer for 30 minutes.
Serve with your favourite rice dish.
