Ingredientes

  • 1/2 lb unpeeled medium-size fresh shrimp
  • 3/4 c. pancake mix
  • 3/4 c. beer Vegetable oil for frying
  • 1/4 c. all-purpose flour
  • 1 c. flaked coconut

Direcciones

  1. Peel shrimp, leaving tails intact; devein, if you like. Combine pancake mix and beer in a small bowl; stir till smooth.
  2. Pour oil to depth of 2 inches into a Dutch oven; heat to 350 degrees. Dredge shrimp in flour; shake off excess. Dip shrimp into batter; dredge in coconut. Fry, a few at a time, 45 seconds on each side or possibly till golden brown. Drain on paper towels.
  3. This recipe yields 4 servings.
